Desperation Coffee Truffles
Updated: May 17, 2019
So.... I just might have made this recipe up tonight out of sweet-tooth desperation. Does anyone else love to be occasionally naughty and binge on recipes with under 5 ingredients... that are oh-so-bad-for-you... but oh-so-worth-it? No? Just me?
(And I'll admit, I've been craving a coffee-chocolate combo since reading this little thing last week - read all about it here.)

Ingredients:
1 (12oz) bag semisweet chocolate chips
1 (14 oz) can sweetened condensed milk
3 heaping tablespoons instant coffee
1 tsp. vanilla
Optional:
Cocoa or powdered sugar (depending on your bitter/sweet preferences) to dust truffles
Preparation:
Melt chocolate over low heat in a small saucepan. Once it's smooth, stir in instant coffee until blended and melted. Add sweetened condensed milk and heat again until smooth. Stir in vanilla and refrigerate, covered, until cooled and thickened. (About 30 minutes) Roll into balls, sprinkle with desired topping, and pop into the freezer. That's all, folks!

Just for a second, throw all your healthy food knowledge out the window and take pleasure in these luscious little bites of caffeinated bliss.
I usually like my coffee with generous amounts of cream and sugar. But these little bites taste like heaven paired with a strong cup of Community coffee with cream, sans any sweetener. The balance is amazing... so rich and satisfying.
And speaking of drinking coffee...

See those cute coasters? My sweet friend sells these and more functional crocheted items at her brand-new shop, Nests 'n' Niches. She brought me these on a quick visit last weekend, and I have found myself using them all week! The lacy style makes these ideal for hot drinks, and you should see her version that protects surfaces from cold drinks! Visit her shop at the link below.
